This fully insulated, full-height cabinet is designed to maintain optimal conditions for proofing and holding a wide range of baked goods. It features a clear polycarbonate door, allowing for easy visibility and monitoring of the contents without compromising the internal environment. The cabinet's interior is equipped with fixed extruded pan/wire rack supports on 1-1/2-inch centers, capable of accommodating up to 36 pans measuring 18 inches by 26 inches each, making it an excellent choice for high-volume operations. The LED display provides clear and precise temperature readings, ensuring consistent performance. Constructed from durable aluminum, the cabinet is built to withstand the demands of a busy kitchen. For added mobility, it comes with 5-inch swivel casters, two of which are equipped with brakes for secure placement. The cabinet operates on a 120v/60/1-ph power supply, with a 15.0 amp draw and a power output of 1.5kW, using a NEMA 5-15P plug.
