With its insulated top, back, and sides, this cabinet maintains a stable environment for proofing and holding, aided by a digital thermostat and variable humidity control, allowing precise temperature management from 80°F to 180°F. The cabinet's interior features adjustable aluminum pan supports set on 1-1/2" centers, accommodating up to five 18" x 26" pans, ten 12" x 20" pans, or five 23" x 23" donut screens, enhancing its adaptability for various culinary applications. A clear Lexan® right-hand hinged door provides easy access and visibility, while the removable heating module and 5 qt. cast water reservoir with cover contribute to efficient operation and maintenance.
