The BevLes Company PHC44-16INS-A-1R1 Proofing & Holding Cabinet is a versatile, mobile, half-height unit designed for professional kitchens. Featuring an insulated top, back, and sides, this cabinet ensures efficient thermal stability across a temperature range of 80-180°F. The unit is equipped with a clear Lexan® right-hand hinged door, allowing easy monitoring of stored contents. A digital thermostat with variable humidity control, along with an LED display, provides precise environmental management, making it suitable for various culinary applications. The cabinet's interior boasts adjustable aluminum pan supports on 1-1/2" centers, accommodating up to eight 18" x 26" pans, sixteen 12" x 20" pans, or eight 23" x 23" donut screens. Additional features include a removable heating module and a 5 qt. cast water reservoir with a cover for optimized humidity control. Its mobility is facilitated by 5" swivel plate casters, two of which have brakes, ensuring stability when needed.
