The BevLes Company PHC60-24INS-A-1L1 Proofing & Holding Cabinet is a mobile, 3/4 height appliance designed for versatile use in the foodservice industry. This cabinet features an insulated top, back, and sides to maintain consistent temperature and humidity, essential for proofing and holding purposes. It is equipped with a clear Lexan® left-hand hinged door, offering visibility and accessibility. The digital thermostat allows precise control within an 80°F to 180°F temperature range, complemented by variable humidity control and an LED display for easy monitoring. Its interior is fitted with adjustable aluminum pan supports on 1-1/2" centers, accommodating up to 24 pans of 12" x 20" size or 12 pans of 18" x 26" size, or 12 donut screens of 23" x 23". A removable heating module enhances convenience during maintenance, while the 5 qt. cast water reservoir with cover aids in maintaining desired humidity levels. The cabinet's mobility is ensured by 5" swivel plate casters, with two equipped with brakes for stability. Constructed with durable aluminum and operating on 120v/60/1-ph, this unit runs at 2000 watts and 16.7 amps, equipped with an 8' cord and NEMA 5-20P.
