The BevLes Company PHC60-24INS-A-1R1 Proofing & Holding Cabinet is a mobile, 3/4 height unit designed for versatility and efficiency in professional kitchens. It features an insulated top, back, and sides to maintain consistent temperatures, with a range from 80°F to 180°F, controlled by a digital thermostat. The cabinet includes variable humidity control and an LED display for precise monitoring. Its single clear Lexan® right-hand hinged door provides visibility and easy access. The interior accommodates various configurations, including twelve 18" x 26" pans, twenty-four 12" x 20" pans, or twelve 23" x 23" donut screens, supported by adjustable aluminum pan supports on 1-1/2" centers. A removable heating module and a 5 qt. cast water reservoir with cover enhance functionality. For mobility, it is equipped with 5" swivel plate casters, two of which have brakes. Constructed from durable aluminum, this unit operates on 120v/60/1-ph, with 2000 watts and 16.7 amps, featuring an 8' cord with a NEMA 5-20P plug.
