The BevLes Company PHC70-32-A-4L1 Proofing & Holding Cabinet Mobile Full Height is a versatile unit designed for professional kitchens and bakeries. With its full-height mobile construction, this non-insulated cabinet features a clear Lexan left-hand hinged door, providing easy visibility and access. It operates within a temperature range of 80°F to 180°F, controlled by a digital thermostat and variable humidity control, all easily monitored via an LED display. The cabinet accommodates a variety of pan sizes with adjustable aluminum supports on 1-1/2" centers, fitting up to 16 18" x 26" pans, 32 12" x 20" pans, or 16 23" x 23" donut screens. A removable heating module and a 5 qt. cast water reservoir with a cover ensure optimal performance and maintenance. The unit is equipped with 5" swivel plate casters, two of which have brakes for secure placement. Constructed from durable aluminum and operating at 208-230 volts with 2000 watts of power, this cabinet is cULus and NSF certified, ensuring compliance with safety and sanitation standards.
