It is equipped with a clear Lexan left-hand hinged door, allowing easy monitoring of contents. The proofer operates within a temperature range of 60°F to 120°F, controlled via a digital thermostat with variable humidity control and an LED display for precision. The cabinet's adjustable aluminum pan supports, set on 1-1/2" centers, can accommodate five 18" x 26" pans, ten 12" x 20" pans, or five 23" x 23" donut screens, making it versatile for various baking needs. A removable heating module and a 5 qt. cast water reservoir with a cover provide additional convenience for maintenance. For mobility, the cabinet is equipped with 3" swivel plate casters, two of which have brakes for stability.
