Standing at three-quarters height, this non-insulated donut proofer accommodates a variety of configurations with adjustable aluminum pan supports set on 1-1/2 inch centers. Capable of holding 12 pans measuring 18 by 26 inches or 24 pans measuring 12 by 20 inches, it can also fit 12 donut screens at 23 by 23 inches each. The cabinet features a clear Lexan® right-hand hinged door, allowing easy monitoring without heat loss. A digital thermostat and variable humidity control, displayed through an LED interface, maintain a consistent temperature range of 60°F to 120°F, essential for optimal dough proofing. Mobility is enhanced by 5-inch swivel plate casters, with two equipped with brakes for secure positioning. Constructed from aluminum, this unit includes a removable heating module and a 5-quart cast water reservoir with a cover, ensuring lasting durability and convenience.
