The BevLes Company PICA70-32-A-1L2 Proofing Cabinet (donut proofer) is a full-height, mobile unit designed for efficient proofing within bakeries and pastry environments. Non-insulated and constructed from durable aluminum, this cabinet features two clear Lexan® left-hand hinged Dutch doors, allowing for easy visual inspection without opening the cabinet. Its digital thermostat and variable humidity control, complemented by an LED display, enable precise environmental adjustments within a 60°F to 120°F temperature range. The cabinet’s interior is equipped with adjustable aluminum pan supports set on 1-1/2" centers, accommodating up to sixteen 18" x 26" pans, thirty-two 12" x 20" pans, or sixteen 23" x 23" donut screens. A removable heating module and a 5-quart cast water reservoir with a cover enhance its versatility, while the 5" swivel plate casters, two of which include brakes, provide hassle-free mobility. Operating on 120v/60/1-ph with a power consumption of 1400 watts and 13 amps, this unit includes an 8-foot cord with a NEMA 5-15P plug.
