The BevLes Company PICA70-32-A-1R1 Proofing Cabinet, also known as the donut proofer, is a mobile full-height unit designed to meet diverse bakery needs. This non-insulated cabinet features a clear Lexan® right-hand hinged door, allowing for easy monitoring of contents. Equipped with a digital thermostat and variable humidity control, it offers precise environmental settings with a temperature range of 60°F to 120°F, essential for optimal dough proofing. The LED display provides clear visibility of current settings. Its adjustable aluminum pan supports are spaced 1-1/2" apart to accommodate up to sixteen 18" x 26" pans or thirty-two 12" x 20" pans, or sixteen 23" x 23" donut screens, providing versatility in usage. The removable heating module and 5-quart cast water reservoir with cover enhance its functionality, allowing for easy maintenance and consistent humidity control. Built with durable aluminum construction, the cabinet is mobile thanks to 5" swivel plate casters, two of which have brakes for stability. Operating at 120v/60/1-ph with a power consumption of 1400 watts and 13 amps, it includes an 8' cord with a NEMA 5-15P plug.
