The BevLes Company PICA70-32-AED-1L3 Extra Deep Proofing Cabinet (donut proofer) is a versatile and mobile solution tailored for commercial baking environments. Designed for full-height non-insulated applications, this cabinet features three clear Lexan® left-hand hinged split doors, offering easy access and visibility. Its digital thermostat and variable humidity control, complemented by an LED display, allow precise adjustments within a temperature range of 60°F to 120°F. The cabinet's adjustable aluminum pan supports, spaced at 1-1/2" centers, can accommodate up to sixteen 23" x 32" or 23" x 23" donut screens, or 18" x 26" trays, or thirty-two 12" x 20" pans. A removable heating module and a 5-quart cast water reservoir with a cover ensure consistent proofing conditions. Mobility is enhanced with 5" swivel plate casters, two of which include brakes for secure positioning. The cabinet's robust aluminum construction is powered by a 120v/60/1-ph electrical system, using 1400 watts and drawing 13 amps, with an 8' cord and NEMA 5-15P plug.
