The BevLes Company PICA70-32-AED-1R1 Extra Deep Proofing Cabinet (donut proofer) is a versatile, mobile unit designed to enhance efficiency in professional baking environments. This full-height, non-insulated cabinet features a clear Lexan® right-hand hinged door, providing easy visibility and access. It operates within a temperature range of 60° to 120°F, controlled by a digital thermostat with variable humidity control and an intuitive LED display. The cabinet is built to accommodate up to 16 baking screens or trays on its adjustable aluminum pan supports, which are spaced at 1-1/2" centers. Specifically, it can hold (16) 23" x 32" donut screens, (16) 23" x 23" donut screens, (16) 18" x 26" trays, or (32) 12" x 20" pans. A removable heating module and a 5 qt. cast water reservoir with a cover are key features that contribute to its functionality. For ease of movement, the cabinet is equipped with 5" swivel plate casters, two of which have brakes. Constructed from durable aluminum, this unit operates at 120v/60/1-ph, drawing 1400 watts and 13 amps, and includes an 8' cord with a NEMA 5-15P plug. The cabinet is cULus and NSF certified, ensuring compliance with industry standards.
