The BevLes Company PICA70-32-AED-4R1 Extra Deep Proofing Cabinet (donut proofer) Mobile is a full-height, non-insulated cabinet designed for professional baking environments. It features a clear Lexan® right-hand hinged door that provides easy visibility and access. The cabinet operates within a temperature range of 60°F to 120°F and includes a digital thermostat and variable humidity control, making it adaptable for precise proofing needs. The cabinet's interior is equipped with adjustable aluminum pan supports on 1-1/2" centers, accommodating up to (16) 23" x 32" or 23" x 23" donut screens, (16) 18" x 26" trays, or (32) 12" x 20" pans. It is powered by a 208-230v/50/60/1-ph electrical connection, utilizing 1400 watts and drawing 7.5/6.8 amps. Designed for mobility, this cabinet is fitted with 5" swivel plate casters, two of which include brakes for stability. The aluminum construction ensures durability and the removable heating module, alongside a 5 qt. cast water reservoir with a cover, enhances functionality.
