The BevLes Company PICA70-32-AED-4R3 Extra Deep Proofing Cabinet (donut proofer) is a mobile, full-height unit designed to meet the demands of professional bakeries and food service operations. This non-insulated cabinet features three clear Lexan® split doors, hinged on the right for convenient access. Equipped with a digital thermostat and variable humidity control, it operates within a temperature range of 60°F to 120°F, ensuring optimal proofing conditions. The cabinet's adjustable aluminum pan supports, positioned on 1-1/2" centers, can accommodate up to 16 donut screens (23" x 32" or 23" x 23"), 16 trays (18" x 26"), or 32 pans (12" x 20"). A removable heating module and a 5 qt. cast water reservoir with a cover simplify maintenance and ensure continuous operation. The unit is constructed from durable aluminum and mounted on 5" swivel plate casters, two of which have brakes for stability. Operating at 208-230 volts, 50/60 Hz, and 1400 watts with a current draw of 7.5/6.8 amps, this unit is designed for efficient performance.
