This full-height mobile proofing cabinet is designed with an insulated top, back, and sides, ensuring consistent temperature maintenance which ranges from 60-120°F. Featuring two clear Lexan® left-hand hinged Dutch doors, it provides ease of access and visibility, crucial for monitoring dough proofing progress. The cabinet boasts a digital thermostat with variable humidity control and an LED display, facilitating precise environmental control tailored to your specific baking needs. Its adjustable aluminum pan supports are set on 1-1/2" centers, accommodating various sizes of pans and donut screens - including sixteen 18" x 26" or 23" x 23" screens, or thirty-two 12" x 20" pans. The removable heating module and 5-quart cast water reservoir, complete with cover, enhance functionality and ease of maintenance. With 5" swivel plate casters, including two with brakes, this cabinet ensures smooth mobility.
