The BevLes Company PICA70-32INS-A-1R2 Proofing Cabinet (donut proofer) is a mobile, full-height unit designed specifically for optimizing the proofing process in bakeries. This cabinet's insulated top, back, and sides ensure consistent temperature control within a range of 60-120°F, crucial for achieving the perfect rise in dough products. Featuring two clear Lexan® right-hand hinged Dutch doors, it offers excellent visibility and accessibility. The digital thermostat and variable humidity control with an LED display provide precise environmental conditions, enhancing dough consistency. Inside, adjustable aluminum pan supports on 1-1/2" centers can accommodate a versatile array of baking tools: 16 pieces of 18" x 26" or 23" x 23" donut screens, or 32 pieces of 12" x 20" pans. This unit includes a removable heating module and a 5 qt. cast water reservoir with a cover, contributing to its ease of use and maintenance. Mobility is facilitated by 5" swivel plate casters, with two featuring brakes for stability. Constructed of durable aluminum, it operates at 120v/60/1-ph and consumes 1400 watts, drawing 13 amps with a standard 8' cord and NEMA 5-15P plug.
