The BevLes Company PICA70-32INS-A-4R2 Proofing Cabinet is a mobile, full-height solution designed for optimal dough proofing, particularly suited for donut production. This cabinet features an insulated top, back, and sides, ensuring efficient heat retention. It is equipped with two clear Lexan® right-hand hinged dutch doors, which provide easy access while maintaining visibility of contents. A digital thermostat and variable humidity control with an LED display allow precise environmental adjustments within a temperature range of 60° to 120°F. The unit's interior is designed with adjustable aluminum pan supports on 1-1/2" centers, accommodating up to sixteen 18" x 26" or 23" x 23" donut screens, or thirty-two 12" x 20" pans. This versatility makes it adaptable for various bakery requirements. The cabinet includes a removable heating module and a 5 qt. cast water reservoir with a cover, ensuring easy maintenance and consistent humidity levels. Mobility is facilitated by 5" swivel plate casters, two of which have brakes for secure positioning. Constructed from durable aluminum, the cabinet operates at 208-230 volts/50/60 Hz with a power consumption of 1400 watts, drawing 7.5/6.8 amps. It is cULus and NSF certified, underscoring its compliance with industry safety standards.
