The BevLes Company PICA70-32INS-AED-1L1 Extra Deep Proofing Cabinet Mobile (donut Proofer) is a full-height, mobile unit designed for professional bakeries requiring precise proofing conditions. This cabinet features an insulated top, back, and sides to maintain consistent temperatures ranging from 60-120°F. It includes a clear Lexan® left-hand hinged door for visibility, complemented by a digital thermostat and variable humidity control with an LED display for precise environmental adjustments. The cabinet is equipped with adjustable aluminum pan supports set on 1-1/2" centers, accommodating either sixteen 23" x 32" or 23" x 23" donut screens, or thirty-two 12" x 20" pans, making it highly versatile. Powered by a removable heating module, the unit has a 5 qt. cast water reservoir with cover for maintaining humidity. Mobility is ensured with 5" swivel plate casters, two of which have brakes to secure the unit in place. Constructed with aluminum, it operates on 120v/60/1-ph, with power requirements of 1400 watts and 13 amps, utilizing an 8' cord with NEMA 5-15P plug.
