The cabinet offers a digital thermostat with variable humidity control and an LED display, allowing for precise environmental regulation within a temperature range of 60°F to 120°F. The interior is designed with adjustable aluminum pan supports on 1-1/2" centers, accommodating various configurations including sixteen 23" x 32" or 23" x 23" donut screens, sixteen 18" x 26" trays, or thirty-two 12" x 20" pans. This flexibility makes it suitable for bakeries specializing in different baked goods. The removable heating module and 5-quart cast water reservoir with cover ensure easy maintenance and operation. Mobility is enhanced with 5" swivel plate casters, including two with brakes. Constructed from durable aluminum, the cabinet operates on 208-230v/50/60/1-ph power, requiring 1400 watts and 7.5/6.8 amps.
