The cabinet is equipped with a removable bottom mount control module, with a thermostat that can be adjusted up to 120°F, offering precise control over proofing conditions. The interior is structured with fixed wire slides placed on 3" centers, accommodating up to 14 pans measuring 18" x 26" or 26 pans measuring 12" x 20" x 2 1/2".
