With a thermostat range up to 200°F and adjustable moisture control, it accommodates diverse culinary requirements. The cabinet supports a generous capacity with universal wire slides on 3" centers, adjustable on 1 1/2" increments, capable of holding either 14 pans measuring 18" x 26" or 26 pans measuring 12" x 20" x 2 1/2". Built for mobility, it is equipped with 5" casters, two of which include brakes for stability.
