This mobile, 3/4 height cabinet is engineered with an insulated body and door to maintain consistent temperature and moisture levels, crucial for optimal food quality. The unit features a removable bottom mount control module, providing easy access for maintenance and adjustments. With a thermostat adjustable up to 200°F and moisture control, it ensures precise environmental conditions for proofing and holding. The cabinet is equipped with universal wire slides set on 3" centers, adjustable in 1 1/2" increments, accommodating up to fourteen 18" x 26" pans or twenty-six 12" x 20" x 2 1/2" pans, making it suitable for various storage needs.
