This insulated cabinet features a removable bottom mount control module, allowing for easy adjustments and maintenance. The thermostat can be set up to 200°F, accompanied by moisture control capabilities, ensuring optimal conditions for holding and proofing. Inside, the cabinet includes universal wire slides spaced on 3-inch centers, adjustable in 1-1/2-inch increments, accommodating up to fourteen 18-inch by 26-inch pans or twenty-six 12-inch by 20-inch by 2-1/2-inch pans. The cabinet is built with 5-inch casters, two of which have brakes, for easy mobility. Constructed from aluminum, it operates on a 120v/60/1-ph power supply, utilizing 2000 watts and 16.7 amps, with a NEMA 5-20P plug.
