It operates with a removable bottom mount control module and a thermostat adjustable up to 200°F, allowing precise temperature management. The cabinet accommodates a range of pan sizes with fixed wire slides on 3-inch centers, supporting either 18 pans measuring 18" x 26" or 34 pans measuring 12" x 20" x 2 1/2".
