The Metro C539-MDC-U-GYA C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, full-height cabinet designed for optimal efficiency in moisture-controlled environments, making it an essential tool for bakeries and commercial kitchens. Equipped with Grey Insulation Armour™, this cabinet ensures superior thermal retention. It features Dutch clear polycarbonate doors for visibility and easy access. The cabinet includes a removable bottom mount control module with a thermostat capable of reaching up to 200°F and integrated moisture control, providing precise, adjustable conditions for proofing and holding. Its universal wire slides are adjustable on 1 1/2" increments and can accommodate either 18 pans measuring 18" x 26" or 34 pans measuring 12" x 20" x 2 1/2". The unit is supported by 5" casters, two of which have brakes, ensuring mobility and stability.
