The Vulcan VP18-1M3PN Proofing Heated Cabinet Mobile Non-insulated is a versatile unit designed to cater to the needs of bakeries and food service operations that require both proofing and heated holding capabilities. This mobile cabinet accommodates up to 18 full-size 18" x 26" x 1" sheet pans or 36 half-size 12" x 20" x 2-1/2" steam table pans, offering substantial storage flexibility. It features a fan and air tunnel system to ensure even heat distribution, enhancing its efficiency and reliability. The unit comes with 10 pairs of adjustable tray slides with a 3" on-center spacing, and a 1/2 gallon water pan to maintain optimal humidity levels. The switch can be set to proof or hold at temperatures up to 190°F, making it adaptable to various food preparation requirements. Its construction includes a glass door for easy visibility and stainless steel for durability. The cabinet also includes a drip trough and removable drip pan for cleanliness. Equipped with 5" casters (two swivel and two rigid with locks), it offers ease of mobility within any workspace. The cabinet operates on 120v/50/60/1-phase power, using 2.0kW and includes a cord with a NEMA 5-30P plug, cULus, and UL EPH compliance, meeting Canadian plug requirements.
