This mobile cabinet accommodates up to 18 sheet pans measuring 18" x 26" x 1" or 36 steam table pans sized 12" x 20" x 2-1/2", making it a valuable asset for bakeries and food service operations with varying needs. Featuring a robust fan and air tunnel system, it ensures consistent airflow for uniform heating and proofing. The unit includes 10 pairs of adjustable tray slides set at 3" on center intervals and a 1/2 gallon water pan, providing flexibility and convenience in arranging trays. The switch functionality allows users to alternate between proofing and heated holding, supporting temperatures up to 190°F. Constructed with durable stainless steel and equipped with a glass door, drip trough, and removable drip pan, it combines practicality with ease of maintenance. Mobility is enhanced by 5" casters, with two swivel and two rigid, including locks for stability.
